I am going to share these two accidental recipes. Why accidental? Because one day I thawed some chicken and had no clue what to do with it. I created meal 1 and then used the leftovers for meal 2. So the MAIN recipe is the Healthy Chicken Noodle Soup, but I have to share the other recipe first. LOL! ALL the ingredients used in these recipes are clean, organic, local, grassfed…yada, yada, yada. To my knowledge there are no GMO’s in this recipe. All spices were organic and everything, but I am not going to write that beside each ingredient! Enjoy!
Pesto Covered Chicken
4 – Chicken thighs and drumsticks
1/2 cup Homemade pesto
3 Garlic cloves
1/3 cup Dry White Wine
1 cup Water
Pour the water and wine into the bottom of your crockpot. Add in the diced garlic cloves. Next place the chicken into your crockpot. Using a basting brush, coat the chicken with the pesto, turn the meat and repeat. **Note: You can sub for store bought pesto. My pesto is 1/2 cup olive oil, 1/2 cup basil and 5 garlic cloves blended together**. Cook on low for 6-8 hours. Serve and enjoy!
Here’s the catch. Save ALL the leftover chicken bones and the leftover meat. Get as much of the meat as you can and put it in a container in your fridge. Add in 6 cups of water, some thyme, and a handful of celery to the bones and boil away. Lower the heat and simmer it down til there is just about 2 cups of liquid. Pour the liquid through a strainer. Discard anything in the strainer. Place the liquid in your fridge overnight. Skim off the fat the next day and this is your new broth base for the soup!
Healthy Chicken Noodle Soup
2 cups homemade broth
4 cups water
1 cup EACH diced celery, carrots, broccoli and onions
10 cloves diced garlic
1/8 teaspoon cloves
1 teaspoon thyme
Salt or garlic salt or celery salt as needed for flavor (My homemade broth was very unsalty so I added quite a bit)
1 teaspoon peppercorns OR ground pepper
1 bag all-natural, gmo free egg noodles
Leftover chicken meat
Add all the ingredients into the crockpot EXCEPT for the egg noodles. Cook on high for 4 hours or so. When you are ready add in the egg noodles and cook until they are soft. I let mine go for about an hour and really turned it into more of a thick stew. It. was. divine!
Not only that, but using ALL the meat we paid for was awesome! And being so healthy, the baby could eat it too.
