Wow. So I really did not want to write this blog post, but I called Belinda and she said, “Go for it!” so here it is.  For quite awhile I have known that we were not eating very healthy.  Sure, we’d eat veggies, fruits, salads and use whole wheat pastas/breads.  But I knew we were eating a lot of empty calories and I was not paying very much attention to labels.  This week we decided it had to stop.  Our baby boy is starting in on his first feedings, our 2 year old asks for snacks…a lot and our oldest girls are getting to the age where they notice how we eat.  Because we make sure the kids get their fruits and veggies.

My husband and I discussed it and we decided to eliminate most processed foods from our diets.  Now, I want to state a few things up front.  The “green” community can be pretty aggressive at times.  I consider our family to be ecofriendly…but not militant.  We use cloth diapers, we do our own compost, we have a garden, we can our produce, we recycle and we reuse when possible.  But not all of our napkins are cloth.  Sometimes we use disposable diapers when we travel.  Some of my favorite cleaners are loaded with chemicals and I am fine with that!  I can readily appreciate people who have made commitments to be 100% green, but that is not what works for us and that is ok!  So you will never find me saying we have eliminated ALL processed foods and you WILL see me blog about getting the occasional meal from Chick-Fil-A or using real bleach to clean.

All that being said, here is what does work for us at this point in our lives.

We buy fresh produce, raw sugar and generally all-natural foods.  I am making an attempt to make our beans from dry beans.  Today I made a huge pot of black beans and those black beans are worked into 4 of our dinners this week: burritos, salads, veggie burgers and homemade salsa!  I wanted Mexican Rice, so I found a natural recipe and my own.  We are eating pizza with freshly grated, truly natural cheese and fresh veggies.  I will be making the pizza crust from scratch. The recipe I am trying will take about 2-3 hours so I have to plan ahead.  The overall goal is to be more intentional.  We have gotten rid of our crackers and other processed items.  And eating more of this:

I don’t want to overwhelm myself so we are making a gradual transition.  The next week or two is about getting rid of artificial sweeteners and processed items.  Next I would like to make our own breads, buns and tortilla shells.  I would love to make our own salad dressings as well.  This is not about making some quick change or a diet.  This is about a lifestyle we hope to adopt and making changes that fit for our family.  We want to be healthy for our kids and we want our kids to have a balanced perspective on food.  We want them to love good, natural, healthy foods and we want them to relax and enjoy homemade cookies or a night out at a restaurant too.  It’s all about balance and moderation.

One more personal goal I have made is to get back into running.  This past weekend I took our girls to a race.

The oldest ran a 5k and the youngest a one mile.  Next year, I want to run the 5k as a family.  Well, minus the baby. LOL! He can ride in a stroller.

I think maybe I am bit crazy.  I just agreed to fly alone…..with FOUR kids.  Oh mercy.  This month I will be flying alone with kids.  Four of them.  At the time of the flight they will be ages 10, 8, 2 and 6 months.  We are flying out to see my in-laws.  They have not yet met our youngest son.

Sadly my husband cannot get time off of work.  They not-so-politely told him that he cannot take any of his vacation time.   Grrrrrr.  Since my husband was in the Army, I have learned to do things that some people are not willing to.  Twice I have had friends tell me they cannot drive an hour away because they just don’t go that far by themselves.  I drove 1900 round trip with 2 kids when my husband was in the Army.  I moved, alone, with two kids and cat while he was in the Army.  So I don’t typically let things like this hold me back.  But still.  An airplane.  An enclosed airplane.  And a toddler son and a nursing baby.  Wow.  Knowing that I will flying alone with kids, I reached out to others to collect their best tips.  This is my list BEFORE the trip.  After we return I will write another post about what really worked and what didn’t.

Oftentimes I click on a blog post titled “Easy _______” and I find a craft or recipe so complicated I need to consult an engineer just to help me read through the directions.  This is not like one of those.  I promise!  This is easy, simple and truly you just cannot mess this up.  We actually made this for Memorial Day.  But you can be Patriotic year round.  Make this for the 4th of July, Veterans Day or any day when you want to feel Patriotic!

First, gather your supplies.  You will need 3 mixing bowls, 1 13×9 cake pan, 3 small bowls, a white cake mix, white icing, food coloring, sprinkles and a few spoons.

Make your white cake mix according to directions and then divide it amongst the 3 mixing bowls.  Don’t worry if it’s not divided evenly, it really does not matter.  In one bowl add blue coloring, in another red and leave the other bowl with just the white cake mix.  Then pour them into your greased pan.  You can swirl them but then the colors bleed.  I prefer to pour them in lines.  Here is the before and after.

Next warm up the icing in the microwave.  When it is a drippy consistency divide it in half.  Pour the white icing over the cake.  To the remaining icing add either red or blue coloring.  Drizzle that color over the white.  Top with sprinkles.

After that just enjoy with your family.  On Memorial Day we ate this.  While we ate it we shared stories of our family members who served in the various wars.  We laughed, cried and definitely made some awesome memories.

Slug snacks.  Yep.  I made slug snacks with my kids.  I know, I know.  It certainly is not your normal rainy day activity but we did it anyways!  It is super fun and you probably have all the slug ingredients on hand.

I bought some green Jello and made it the night before so that it was good and set.  You can easily make slug snacks for kids without the Jello and just serve them on a plate.

Then you peel and slice one banana lengthwise.  And place it on the Jello, flat side down.

Next, you add pretzel antenna’s.

Let your kids decorate their slug with food coloring (buy all natural food coloring to make it healthier).

Your kids cannot ruin it!  They will love eating it and love making slugs!  Do it for the start of your garden season, for a rainy day activity or just for some fun with your kiddos.
