Recently a friend shared a easy and healthier muffin recipe with me. I tried it out and it was a success so I wanted to share it with you all! All you need is a box of devil’s food cake mix and a 15 oz can of pumpkin. THAT’S ALL! Just mix the pumpkin with the cake mix and spoon into muffin tins (the mix will be thick) . Bake at 350 degrees for about 12-15 minutes and voila! Yummy, fairly healthy muffins!
As you can see, they don’t fluff out like regular muffins. They are more like cheddar biscuits. They’re really moist and taste more like chocolate than pumpkin. In fact, I barely tasted the pumpkin at all. I splurged and put a few chocolate chips in half the mix. They were super yummy with or without them and the boys gobbled them up! And not only do they taste great but I like the fact that I didn’t have to use any oil or eggs in them. I’ll definitely be making these often!
